Cats are very territorial and they prefer to stay on their "turf", which is their owner's house. Some cats hate being on leashes, and while a dog can be trained not to run too far when it's off leash, cats are a lot less predictable and could easily get lost. There's also the fact that they do not have the stamina for long distance walking and they need much more sleep and rest than a human.
I have seen people take cats hiking on nature trails but they are usually in backpacks like this one. And again, whether or not your cat tolerates that sort of thing is going to come down to its personality. My cats absolutely hated being put into crates but that may partially be because it almost always meant they were going to the vet's office, and they hated car rides too. Some cats are fine being carried around in a bag but others will be having none of it.
