You always want to show your gratitude somehow. I'd usually do some chores around the house as a show of thanks. Also, I'd typically buy my own food because I didn't want to freeload, but depending on the host, they often provide dinner if you help in the prep and cooking. Every host is unique but most of them are nice and friendly, I mean they're volunteering to house a travelling stranger.
