OP,I carry an old military issue survival knife. I use it for driving tent stakes, food prep, a jillion miscellaneous cutting tasks, cleaning fish, scaling fish, and whittling. Once in a blue moon I use it to process wood if I don't have an axe handy. Since I'm innadesert much more often than I'm innawoods it doesn't happen with any great frequency.
Years ago, on a private ranch in Oklahoma, I built a rainproof shelter using only it and native materials to prove a point that had been hotly debated over too much alcohol at the ranch headquarters the evening prior. That was actually quite enjoyable, I can see at least part of where the bushcrafters are coming from.
