OP, I just slit the jugular on my hens, the cleanest way is to snap there neck. I've never done it, but most old timers will do it this way. Just snatch the chicken by the head and do a swift flip and jerk motion with the chicken in the air.
As for plucking, dipping the whole chicken in a pot of boiling water releases the feathers from the skin and makes plucking 10x easier. The down side is it also tends to make the chicken smell pretty foul. Some people prefer to just skin it with the feathers in, much quicker and cleaner.
The first time I did a chicken, I just watched a youtube tutorial. There is a lot of info out there and you can go step by step with the video.
If your chickens are old, the meat will be rather tough, try a slow cooking stew to help hide the chewiness.
