There are compasses for the Northern hemisphere, compasses for the Southern hemisphere, and more expensive ones that work on both.

sighting compass (the ones with the mirrors) are really good in dense woods.

OTOH when I'm in the mountains I don't even bother bringing a compass since I can see the mountains.

The ones with the mirror allow you to walk a bearing. You use the mirror to look at the needle, which you keep in a particular spot to go in a particular direction.

The needle aligns along the horizontal part of the vector which the magnetic field lines at your current location follow.

My watch has a digital compass.

Any reason why I shouldn't trust it?

I have tested it and it's pretty fucking accurate. I can also re-calibrate it in case a magnetic field fucks its bearing.

You can trust it to show apparent north, which is between 0 and 40° from the magnetic south pole (depending on your current location), which is currently about 10° away from true north, but moves around.
Just like any other compass.

It points about 10-20° away from north most of the time. Except if you're too far north, or close to an iron deposit in the ground. Then it points anywhere.
Calibrate your compass by the north star at night. It's 0.5° from true north.
