I spend a fair amount of time out, and I bring sugar, salt, pepper, Cinnamon, red pepper flakes, and baking soda. I take vinegar and soy sauce in little bottles.
How much effort you're willing to put into your cooking decides a lot...i carry stuff for oatmeal, pancakes, stews, rice and beans, and more when I go /out/ because I like variety.
As for your "fresh" it's a good idea to know what local wild eatables you can find. If you can get fresh meat in shops along the way, all the better.
Cheese? Soft cheeses, you shouldn't pack with you, because they will mold, quickly. But you can easily transport a block of, say, aged cheddar or Parmesan for a week or so.
As for "OMG POORFAG, HURDUR," if you're to stupid to do the research and realize you can cobble together a dehydrator for $20 or so...you're probably to stupid to take advantage of any of the advice I have to give you on that front. Seriously. Try googling "DIY dehydrator", you fucking moron.
