A full tang puukko with a rat-tail tang will be a kind of stacked handle as well, but the stuff in the stack will be things like reindeer horn, wood, brass, and colored washers. Top knife in pic related is made that way.
You could also do hidden tang handles where there's no metal or attachment of the handle material visible. Those can be full tang or partial tang as well.
