I'm pretty sure that most states in Australia have similar laws in that you aren't permitted a gun licence unless you're a member of a shooting range or have some legitimate reason for owning the gun. I think the laws become less strict when you get into places like Tassie and QLD.

"The police station will forward the application to Firearms Branch.
Checks will be done into your suitability to hold a licence.
If you are considered a suitable person, Firearms Branch will send you a 'training letter' advising you of the training you will be required to undertake, depending on the purpose for which you wish to hold the licence.
If a T.A.F.E. course is required, information of venues of courses is supplied with the 'training letter'.
If your purpose is as a member of a recognised firearms club, your club's training officer will provide you with the relevant information.
If your purpose is as a security guard, a list of authorised security training instructors will be supplied with the 'training letter'. Justification will also include proof of employment with a licensed security company."
As for knives - If you aren't an idiot with them, everything is fine. Essentially you have to have a "valid reason" ,such as recreational or relating to your work, for carrying the knife at that time. That means you can't go into populated areas with a big fixed blade, but if you're carrying it outdoors where you can use it, that's no problem.
Folding knifes, I just take everywhere.
Hunting is the fuzziest crap in the world in my state, but from what I can tell, the gist is "Don't hunt endangered native animals, get a hunting permit"
I don't think it's very strict.
