I'll fillet them as normal, and remove the reddish "mud" streak from the center of the filet. Chunk up the meat into 2 or 3 inch segments. Dip in egg, coat with cornmeal, then deep fry. I'll keep fish in the 14-20" range, they're usually about 2-3lbs at that point.

Love bullheads, IMO alot of the dislike comes from difficulty to fillet and the fact that they just don't get that big. Alot of my friends think they are junk fish and always offer me their catch when they catch them which I gladly accept. Flavor IMO is not far off from catfish which is essentially what they are, just a smaller breed of catfish. I drill a screw through their head into a 2x4 and skin then fillet them. At the river near my house I always catch abnormally large bullheads. I prefer to panfry in a mixture of bisquick, bread crumbs, and spices. Really good eating fish.

I live near a millpond and it's full of tiny bullheads. Pretty sure the average size is like 2-5 inches. There are larger ones in there, but because there are just so many of them I think they stay undersized.

Not even the west coast natives will eat bullheads, and they'll eat fucking anything. Bullheads are half mouth anyway, so you'd be lucky to get a couple of small fillets off their ribs. They are completely inedible. If you want to eat bullheads, though, be my guest. You can have all of mine.

I love how folks mention how these fish accumulate pollutants/toxins/heavy metals, and in doing so are make the assumption they were caught in polluted waters. Actually, I caught these in a national wildlife refuge, which has no tributaries and is surrounded by forest, so no fertilizers, industry, or other sources of normal contamination are present. If anything, the refuge is the safest place around to catch and eat fish.

look, mercury in fish was a problem long before human sources of pollution.

it's normal, natural, deadly bioaccumulation. It gets worse in polluted areas, but it's bad enough without pollution to kill you if you make a constant diet of carnivores including predatory fish.

You ever read the annual reports that national wildlife refuges have to write for the government. In those reports, they have to analyze not only water contents, but also the tissues of game fish. The particular refuge that I caught those fish at were well below those levels the US government deems safe for consumption.

what was stated was that the anon's fish are clean because the water is not polluted.

this is false.

bioaccumulation occurs in such a way as to magnify toxins even in unpolluted environments.

the upshot is that IF ONE WERE TO EAT FISH every day they'd quickly die of mercury poisoning EVEN IF THE WATER WAS COMPLETELY UNPOLLUTED.

I'm not sure why the slower anons think that means someone is eating fish every day. They don't understand extrapolation I suppose.
