Take your filet knife and insert it underneath the gills from outside the mouth, put the blade ontop of the gill 'bones' and then cut downward, cutting through each of them`
Do it on both sides of the mouth. Hang it head up or head down, it doesn't matter either way. The quicker you do it, the easier as the blood can come out coagulated if you wait long enough.
Its optional to bash them on the head with something to stun them, and probably more humane. Another option is to cleave the head off if you have the correct blade. Basically a quick clean death.
