I don't take skins, so I slit the belly, empty out the guts and lace the slit back up for transport (electronics clamps/nipple clamps are your friends), then I break the legs, cut off the head, slice the skin around the front legs and pull it off like a sock. Guts and skin go to the ant's nest, head goes to either dog or my cat (who hunts rabbits herself, she eats the head and upper organs, then leaves the rest for my mini foxy), kidneys go straight to the pan then my stomach, and the rest gets frozen.
