Sun rise/set is tough because of where you happen to be on earth and it varies greatly by latitude. Back in the day when people lived in mud huts and planted crops, they used the rising times of certain stars, as stars are so much further away from earth than the sun is to earth, it was easier to estimate the winter and summer solstices and wasn't latitude dependent. You need to look for the Heliacal as this star rises with a difference of four minutes each day. Look up Heliacal Rising. This is your best bet for off the cuff estimations.
