Sounds like you need to get square on your metrics, OP.
You have these ideas about criteria, but they aren't nailed down enough to be useful.

Do you want to be able to live there year-round or only from time to time? How big does that mean your cabin should be? Someone (OP?) said that water on the property wasn't a big deal, but I'm skeptical because bringing in your own water can get expensive for how much we use and a rain catchment system might not be feasible in Arizona.
>a couple acresWhat do you intend to do with this land (see above)? Gardens and animals can take up more land that you might think, and 5 acres isn't really very much once you get out of town.
>Completely devoid of otherIn what sort of radius (ties in with self sufficiency vs going into town for supplies)? If you only own 5 acres, then other people will own all the land around your little plot and there isn't much you can do about that. Maybe include the criteria that it needs to be bordering public land? This allows for smaller properties with the same feel as larger ones.
>Good weatherWhat is 'good weather'? "Good" is not a qualitative, fixed term (therefore it cannot be achieved). Do you need x inches of rain in a year for a catchment system? What temperature range are you looking at? How much snowfall is acceptable? Do you plan on living there year-round, and what weather needs to exist for you to do so happily?
To make these kinds of choices you need to have very strictly defined goals. This is very difficult to do unless you understand what is required to achieve the overall goals.
