I've been kayaking since I've been little and here's the advice I can give.
First, I wouldn't recommend a sit-on-top kayak. They don't have a lot of storage and they give your feet and legs heavy exposure to the sun, which is something people don't often think about. Also, they tend to be extremely slow and hard to paddle
Second, if you are brand new, don't spend a ton of money on a kayak, because you won't get your value out of it. $400 is plenty. Don't even think about doing white water either until you get a lot of experience.
For fishing, the best advice I can give is just to throw the line over your shoulder and start paddling. troll that way. You are almost guaranteed to catch a lot of fish without even thinking about it. Of course, you have to do your research on the types of lures to use and make judgments on the bathymetry of the water, depending on your target species.
