I'll start with one of my favourites: bear's leek, allium ursinum
I harvested about 2 kg today (pic related), most of which will be used for pesto
bear's leek is a great food in spring, you can use it to make pesto, soups, dips and sauces and it also works great in side dishes and salad, the buds can also be pickled
it has a distinct and fresh garlicy taste
it usually grows in groups so once you've found a spot you can harvest a lot at once
it can be found in almost all northern parts of Eurasia, but is not known to grow in the southern hemisphere or the Americas (sorry guys)
you should be careful not to confuse it with Convallaria majalis which is highly poisonous
