Does anyone have experience cleaning and cooking American eel? I often catch them when fishing for catfish, and it sounds like they're good eating.

If I recall correctly, they have a bitter spine of cartridge that you have to pull out, but I tend to not eat anything that resembles a snake, so I wouldn't know
