How to obtain hiking maps from areas that aren't well mapped? Should I just print out the terrain maps from Google? They don't always show many trails but at least they show the elevation and streams pretty well as orientation.

Maybe. Then write in your trails as you go. Hand them down to your son one day. If it's in a national park there should be a trail map somewhere. Contact the Rangers for that area.

I don't know about other places but you can get Canadian topo maps printed on Tyvek. Or apparently you can waterproof paper with silicone sealant thinned with paint thinner (never tried it on maps but I've waterproofed canvas for a skin on frame kayak that way).

Go to your local Geomatics company. They will be able to print the topo maps you're looking for.

Various government agencies can also provide usually, but much more annoying to deal with.

Get a waterproof map case with a transparent view pane that you can fold the map so the area you want is visible. Much easier than trying to waterproof individual maps.
