What's your region and some edible treats you have found innawoods?

Great Lakes area here. So far I've picked wild asparagus, some dryad's saddle mushrooms, and a couple morels.

I know almost nothing about foraging, but I'd really love to learn. I'm just having a hard time Identifying food stuffs unless they're extremely obvious.

I know what I'm doing when it comes to fruit, nuts, and mushrooms: Morels, lobster, chicken of the woods, Chanterelles, etc.. they all look weird, distinct, and so forth.

But Plants on the other hand all look the fucking same and I can't tell them apart and I've come under the impression there's a lot of tasty wild plants that aren't being taken advantage of.

Oklahoma here.

Wild onions, mulberries, honeysuckle and dandelion for starters. Then there's all sorts of greens. Purple Dead Nettle, cleavers, mustard greens, I've heard of plantain nearby, and wood sorrel is always great.

I can't eat either one. Dandelion is too bitter no matter what I pick or how I prepare it and I can't eat the flowers because of HIVES damn it. The flowers I love though. PDN I can't eat because it tastes too much like the bottom of a lawnmower. Same with henbit and ground ivy.

I finally found cleavers locally. I'm going to wait until they fruit so I can make coffee with them and reseed more elsewhere.

I've been sticking to redshank, lamb's quarters, chickweed. Can't wait for American burnweed to pop up.

there are children who grew up eating lots of wild green that say dadelion tastes not bitter at all

same with wild fruit. if you are used to stuff yourself with half a kilo industrial sugar a day, you may not like them, because they are "not sweet enough". when you manage to cut that shit out of your diet, you suddenly learn to appreciate naturaly sweet things much more

Read as much information on locating them online as possible. Watch Youtube videos of people showing you where to look. Study the type of area they're growing in the videos and then go out and use that information in the real world. It's not easy. It's not always skill that finds them, either. There's a lot of luck in finding spots that no one else knows about. Once you find them you keep your mouth shut, don't reveal your spot, and go back the next year to collect.

a month ago I picked like 6 pounds of black berries in my neighborhood and started making wine with them. I've never done it before, I wanted to go by the recipe, but I got a job right after I picked them and I was too busy to care. I didn't let the brew die, I gave it sugar once a week, tried to stir it a few times a week and I strained it after 2 weeks. it's been in a big pot with a towel over it and a pizza pan on it with a big rock on top.

I wanted to do the thing with the air hose and 2 jars but I said fuck it and decided to drink some. it's super sweet and vinegary and I'm half drunk, off of about a pint. it's blowing my mind that I'm actually getting drunk on some shit I picked up off the ground a month ago, but I know I didn't do it right. if I keep drinking this am I gonna die?

So,

I found a whole bunch of Plantain Plants growing by the side of a road; like, the entire length of the road is just covered in them sporadically.

I can't mistake this plant for any other plant, so it's got me excited: I know it'd edible, but how do I prep and eat it?

They are best when young and tender. These are the type of plant where you don't allow them to bolt (flower). Like a lettuce for instance. The larger the leaves the stringier and more bitter they become. Regardless of their size, color, and age you can chop them keep them from being so stringy. The narrow leaf variety of plantains are even stringier, fyi. You can use these raw in salads, as wraps (stringy wraps!), or as a potherb. As a potherb, you can use them like you would collards and spinach.

If you save their seeds, you need to know that they germination rate is a bit low. Also, I think they need some coaxing with a mild acid bath before planting (to simulate a bird's stomach). Dipping them in lemon juice (5-10 seconds) or soda pop (20-30 seconds) can help remove any protective moisture-barrier coating. Otherwise, they may take 1-2 years to germinate (2 out of 300 seeds may germinate right away without the acid bath).

As far as their flavor goes. Cooking will cut some bitterness as well as what ever recipe seasoning you use. Whether or not you like it will depend on your palate. You may find them rather bitter and will need to work up to eating them. They are far less bitter than dandelions, more bitter than nearly all non-bolted lettuce, farm more bitter than lamb's quarters. Probably just a bit more bitter than kale. If you can handle kale, you should do fine with these.

Oh shit. Yes, it is going bad. A microbe that eats ethanol and turns it into ascetic acid is ruining your brew. The best course of action is to zap it with potassium metabisulfite as soon as possible and pitch in new yeast. Then hope it doesn't get any worse. If it does get worse, filter it, chill it, keep in cold storage, and drink it then or toss it out and start over. You'll need to sterilize all your equipment after this because if you don't, you'll be reinfecting anything you make from then on with that microbe. "Sterilize", not "sanitize." That means straight bleach for 20 seconds or baking metal/glass equipment in the oven at 350F for 3 hours (don't open until cool or glass will shatter!) or using an autoclave (home pressure canner) to sterilize.

No, the worst that can happen is that you get the shits. but, in this case it merely sounds like you have vinegar in the brew, so unless you have an adverse reaction to vinegar, don't worry. You can actually make full vinegar in this manner, fyi. When a brew does go bad to the point where it can adversely affect your health, you'll not be able to force yourself to drink it because it will be so fucking bitter and nasty that you can't swallow.

Then you go out and bring in some plants and compare all the markers of identification/taxonomy. Start identifying everything that is edible and not edible.

Remember, "edible," doesn't always mean, "palatable". Lots of edible plant guides don't even list what parts of the plant are edible, when it may or may not be edible, how to harvest it, when to harvest it, how to cook it, etc. Like pokeweed (Phytolacca americana). You can only eat it at one specific stage in its like. All other stages it will be very toxic. Others are just horrifically bitter or woody at certain stages but delicious and tender at other stages.

All I can find thus far is on http://nutritiondata.self.com for stuff like Lambs Quarters (cooked, boiled, drained, with salt), Dandelion greens raw, Dock raw, Chicory greens raw, Burdock root raw, Mustard greens raw, Cattail Narrow Leaf Shoots, and Purslane raw. That site has a great amount of info on the plants and foods it does have, but with wild greens there's hardly any selection at all. It does make it great for comparing common grocery store/garden vegetables with the foraged wild stuff (pic I put together from that site).

There are other sites, but most focus on 1-2 stats and hardly a select, most repeat the info in these images.

You don't keep the walnuts in the green covering. Remove it and clean the outside of the shells. They don't ripen. They do season. After the shells are clean you store them in a dry location for about 1 month. This helps dry out the meat of the nut inside. When it seasons in this manner the meat shrinks a bit and loosens from the shell. This makes it far easier to remove the meat later on.

Most nuts need a period of seasoning like this to help free the meat inside.

I spotted some Morels today while going on a walk. It had rained; I'm going to say maybe 3 days ago? So they're a little worm-eaten and dirty.

This is the first time I had actually spotted Morels before, so after I was confident they weren't false morels I picked them despite their condition.. How do they look to you guys? They're a little crumbly.

I'm not confident they're "platable", but it'd be amazing if I could wash and eat them.

They're fine. I've picked and eaten morels in way worse shape than those.

Morels are hollow and the cap is attached to the stem.
False morels are filled with cotton like fibers, the cap is only connected at the very top, and will fall off easily. The cap is also wrinkled rather than pitted. It's fairly easy to tell them apart, especially when you take them home and cut them in half.

The book recommends grabbing it up before the flowers can grow. The younger the leaves, the less bitter and stringy they are, apparently.

Why? Are they cooking the life completely out of it or something? Was there any taste left at all except salt? I usually eat it raw. Yes, eating it before it bolts is better. Also, you need to chop them up to lessen the stringiness.

When I do cook it, I only boil them until they are bright green then stop. Any more than that and they can develop some additional bitter compounds. I never understood why people cook greens to death. It is like they don't want any flavor or nutrition. At most should be boiled until the bright green stage and you can throw out that water to remove most of the oxalic acid (inhibits calcium absorption). The longer you cook it the less heat-destroyable vitamins you get from it.

As for raw, I ate a few pieces raw before cooking it. Tasted too much like grass.

I looked up the oxalic acid thing because I'd hate to unnecessarily waste boiled water during a camping trip and it seems to not be that big of a deal. Tossing the water isn't a big deal if you are not eating that much of those greens. If you are eating a lot of it then there's always a risk of kidney stones, which are always fun. People on diets that are low in/or avoiding meat and dairy, who need more calcium, should also toss the water so they can get more from the plant than they normally can.

I toss the water because I want more calcium from a non-animal source and I eat a large amount of greens already.

As far as flavor goes, some plants create more bitter and sulfur compounds when you over cook them. Some don't. Brassica plants like broccoli, Brussles sprouts, as well as plants like asparagus become bitter when overcooked. Which is why most kids hate them, their parents don't know how to properly fix them. So, a rule of thumb is to cook until bright green (steaming being the best method for this). This also helps retain flavors you normally wouldn't experience otherwise in any plant.

Much of the flavors you experience in wild greens are not for the faint of heart or the inexperienced. You have to eat wild greens a good deal for some times (past the 2 week mark) to really change your tongue's taste bud shape and start to like some of this stuff. Plantains are on the mid-lower end of the flavor scale. Chicory is on the high end. They are the literal definition of an acquired taste.
