Canoeing trip: equipment & fishing advice

Hello /out/, this is going to be a massive advice-asking post, so for the ones who are like "Woah there Charles Dickens, I didn't come here to read a novel" we've put a TL;DR version in the next post.

We're a group of 4 Dutchfags (2 girls & 2 guys) going on a 1-1,5 week long canoeing/camping trip next month starting in the far-east of Norway and crossing the border into Sweden.
This is pretty much our first real /out trip so we're hoping to get some solid advice on what precise gear to buy, what to pack and other need-to-know stuff about this kind of trip regarding camping, fishing, etc.
We're starting completely from scratch, so you can assume we don't yet own anything that we could use out there, nor know how to best set up camp & gather food etc. At least we're capable at one thing, which is cooking.
Starting now, we have only less than two weeks to acquire ALL the necessary equipment, including backpacks, tents, sleeping bags, etc. The whole deal.
So please, throw your ideas for a packlist at us, but brand and specific type recommendations are especially very welcome, since you have tried and tested it. We'd really appreciate any help.
It's certainly not that we're too lazy to do our own research, but due to the fact that we, a bunch of rookies, have <2 weeks to complete our preparations and there is so much (contradictory) information out there, we could definitely use some help in picking the exact stuff.

I realize a large portion of the advice we're asking entails general /out/ items and other common sense things, but we'd really like to form a concrete idea about these things, specifically relevant to this type of trip.
Hopefully this thread could therefore also serve as a general advice thread regarding equipment & food gathering for planned /out/doors activities in Nordic countries. Just throwing it out there lol.
