Some hikes take all fucking day. Thats a whole days worth of shit. And you need that space even more so in the Winter. People could be carrying at least 20 pounds of gear in these "day bags". Food, water, clothes, med kit, hiking poles, camera equipment, cooking gear, stoves, etc etc. A nice steel frame and a padded shoulder and hip belt are nice things to have while you enjoy your outdoor experience.
Plus people in the desert dont have the luxury of carrying only one water bottle. I have to take at least a gallon of water on big day hikes. That is literally at least 9 pounds if you include the containers I also bring with me.
