What should a pair of jungle boots have in particular? I've been searching around for a while and heard good things from altama, I'm interested in getting the 'Olive Drab Jungle US Vulcanized Boot'. Anyone have suggestions? Please stop me before I make a horrible mistake.

I've had two pairs of Wellco black jungle boots. I gather they're owned by the same people as Altama so it's probably the same product.

I've found that the soles wear particularly fast on pavement/tarmac and they don't provide enough ankle support for my liking.

Wore them for years and like them, but it boils down to personal preference, whatever works for you. In my experience the sizes tend to run large., usually I wear an 11 1/2 but in jungle boots it's 10 1/2.

As a general rule of thumb, if you're not going to use these in very hot (30°C+) or very humid conditions, they're not worth it. There are far better boots for other conditions, such as general hiking and/or trekking.
But, as for the areformentioned hot and humid/wet conditions, there are no better boots. I recommend either the Altama or Bata ones, I've had a pair of Bata ones for more than 15 years and they've never let me down.(not my picture)

Would jungle boots be good for hiking in the Florida Everglades? Climate is very hot and humid. Wading through swamp as well.

OP here, I'm from straya so I assume the heat/humidty will be accounted for. I've heard bad things about the foot soles, can you vouch for that? Anything else I should know before jumping into a pair?

Yeah, the standard insole is, while passable, pretty bad. I'd recommend switching to a superfeet insole.
