Lift is produced on a wing by a pressure differential, low pressure on top and high pressure on bottom, creating an upward force. When these high and low pressure flows meet they can form condensation if you're going fast enough. It's basically a man made cloud, just water vapor. Take your tinfoil hat somewhere else please bro.
