You're right about your options in colorado and medicine bow, there's some national grassland and other mountains if you're willing to drive, but otherwise you're surrounded by the high plains in every direction. The exciting outdoors stuff is mostly in the western portion of the state, which is a 6 hour drive for you. There, your /out/ options are nearly endless, the wind river range, bridger-teton national forest, and the Tetons and Yellowstone, just to name a few. Medicine bow is pretty cool though.
Wyoming is a state that runs on the energy industry and ranching which pretty much dominates the culture outside of its few cities. You'll be in the largest city in the state which goes pretty far that being said. Also, Wyoming has a terrible male to female ratio. Anyway, you'll be in a city, so there are always city things to do, if you're social enough.
