It means that the shell of the bottle has two layers, an inner and outer layer, with an absence of air in between.

The vacuum means that heat transfers more slowly because there are no air molecules to transfer the heat more efficiently.

Creating a vacuum means that there is less thermal conduction and your warm/cold liquids will stay warm/cold longer.

I'll add that I've never used one of these for my /out/tings although they are nice for keeping coffee hot in the morning.
