hiking in Europe

I have a one way ticket to germany for March 15, starting out in Dresden. I am going in fairly naive and my only goals are to visit farms/alternative communities and hike through the most beautiful nature. Any recommendations?

look at these national parks for a start.
there is a lot of diversity.
you could start with Sächsische Schweiz

Wilderness is not an European thing, but there is still relatively savage lands in Norwege/Sweden/Funland, in Spain, in the south west of France and in Romania/Bulgaria.

Where would you go out in France? I live there, but I always end up hiking in Germany or England. Not very often, that is.

If you are into wilderness, the Pyrenees is what you want, but the forest of Orleans gave me an impression of a Canadian forest with paths on. The forest of Blois must be better.

The Auverge volcanoes have some cows and one road but let you believe it's the Jurassic again.

We are in winter, so most GR in Bretagne or the Voges should be quiet.
