I prefer hot meals. After a long day of hiking nothing like a good hot dinner. I usualy have a hot breakfast too (oatmeal and coffee). Lunch is the only meal I eat cold. Its usually something I can eat on the move like a tortillia wrap, trail mix, or a cliff bar.
MREs are shit for long distance hiking, too heavy. If you are not worried about weight (car camping/canoe camping) you can just pack real food.
Most complex food would be the breakfasts we make while canoeing. Usually have bacon or sausage, flapjacks, scrambled eggs, home fries and coffee.
Truth be told when I go on canoe trips its usually with 5 other people so we have 3 canoes we cram with food and gear. Most cooking is done on a coleman stove.

Not really complex per se but we've been making campfire pizzas in this lil' oven made from pie tins and binder clips. The oven is really lightweight and also works great for biscuits and sweet rolls.

I'd like to be the first to say that actual mres are over priced crap ave pretty bad for you to boot. The ones I usually get are like, greasy entree + pb&j + candy + coffee + dessert, stupid food imo.

My friend said the only MRE she enjoyed during her time serving at M*A*S*H units were the pasta-based ones. There was a beef dish she remembered liking but it was only because of the sides and the beef itself was horrid.

I once tried baking bread. Wasps love the dough/yeast. Plus most of it burned. Everything was coverd in sticky dough. It was a real mess. I never did it again.

Make a curry at home and package in sealed baggie. Have that with fresh made rice.

Bacon is also a good one

For quick meals I like soups and noodles

For breakfast I like fruit and porridge and coffee

For snacks I like trail mix and biscuits.

Sometimes I'll make bannock on the fire.
