The Leslie St. Spit is an easy 10K walk to the end and back (or ride your bike). Lots of birds, and beavers, and side trails, but the main trail is a 2 lane road (closed to cars). Only open on weekends but I've gone weeknights after they close.
Lots of trails in the don valley north of Bloor but watch for mountain bikes. Even more in the Rouge Valley.
Look at the MTRCA website for conservation areas near the city, they're busy in summer but they're close to town and OK for day hikes (GO Transit might go near some of them).

http://brucetrail.org/ There's a hole in the fence on the grounds of the water filtration plant (on the east side up the hill) and a path down to the beach below the scarborough bluffs. You can go for a nice long walk along the shore. Parts of it are used as a nude beach but they leave you alone if you leave them alone.
Maybe have a look at the bulletin board at Mountain Equipment Co-op & ask the staff at the outdoor stores.
