The main factor is time/knife. Since the w.e.'s stones are diamond, they will *never* wear out. So you don't necessarily have to worry about wear and tear on your system.
For shitty kitchen knives, the steel is extremely soft, and can be sharpened up nicely. I would charge $5 /kitchen knife, and if one was particularly large, I would increase the cost accordingly.
But for modern folding knives and fixed blades with some of the more advanced steels (S30v, s35v, s90v, s110v, m4, d2, 01 etc etc) it can take quite a while to sharpen out chips in the blade and such. So I would charge $10 ~ $40 a knife... Keep in mind though, some of the knives I sharpen cost >$2000. Always remember, it's easier to keep an existing client than find new ones, and the repeat sharpening are the best way to make money.
