Extra water, even if you don't feel like hiking with it, leave it in your car. Same with a bit of extra food, a jar or peanut butter or nuts, something that doesn't melt (if you care about that) that also has protein.
Do you want to start a fire? How big of a fire? Will there be wood? Are you somewhere that allows you to harvest wood for a fire? I always start a fire when I camp but then again, I tend to bring things that I can cook over a fire. I like to try to fish when I'm in an area for it but I usually still have something like meat or at least hot dogs to cook.
Bring a trashbag or at least a plastic grocery bag to throw trash away. Please don't leave your garbage in our nice outdoors.
I always take at least a multitool out with me for hiking and camping. You don't necessarily need a super good knife. If you plan on collecting wood for a fire, bring a hatchet or saw.
Are you somewhere with dangerous wildlife? If so, bring bear spray.
