You could always braid the three strings together and then tie off the end with a simple knot.
Or you use a reef knot (square knot in your picture) with the third string interwoven at 90 degrees between the other two. That way you have a six point central "spoke" to work with.
Most knots really depend on the context of what you're tying, however, so more information may be needed.
