Well if you're shooting JPEGs maybe they are but at that point you're simply admitting that you like the software on the D200 better.

This is also why every phone has different looking JPEGs, they all know if they went for an accurate faithful rendering people would realize most phones perform similarly and they wouldn't be endlessly buying new ones every year to try the new camera presets.
Shoot RAW and this all mostly stops being a problem.
All that said, the D200 is an ISO100 body while the D300 is ISO200. In good lighting the D200 should be superior and provide much cleaner images. Due to it being a CCD, it probably has better colors too. Early CMOS were noisy and cross talk could hurt color purity.
