Teaching them the exposure triangle and all that might be useless unless they have good cameras at home/decent phones. Would the rule of thirds really bore them? Judging by how many utterly fucking trash photos I've seen I'd say composition is pretty well lacking in today's populace.
To make it interesting for them maybe make a "Easter Egg Hunt" but for compositions. I.e you spend the first few days teaching them the boring shit (how? I dunno man good luck).
During this course hand out something like pic related. As a practical exercise, get them to go out (in groups maybe so they don't die?) and try and look around and replicate one or more of those compositions. Winner gets a prize. No participation prizes, they'll become bitches (sarcasm?).
Are you bringing gear? Will there be gear there? Will they have their phones? Sound like torture. Unless the kids are Mormons or something fully prepare for 93% of them to think photography is gay, you're gay and your camera is gay.
