Unless you're a professional photographer or have so much money spending the price of a used car on a camera wouldn't phase you I wouldn't go for a brand new full frame camera.
If you upload your pictures to any social media you wouldn't be able to tell the difference between a picture taken with a 5d mk1 or a mk5 with the same lens because of the ridiculous compression they put on pictures, a 3 thousand euro or more price difference for nothing.
Either way I was in your position not too long ago and got a second hand 6d for 300 euro and I've been happy with it ever since, couldn't of imagined paying over a grand extra on the mk ii.
It's up to you what you want to do with your money anyway, just know that if you're only posting your pictures to instagram (no shame in that if you are) you're only spending extra money for features rather than image quality, so I say save your money and get a second hand 5d mk ii or a 6d and spend the money you would have spent on a mk V on good quality glass, which will still make a noticeable difference even when heavily compressed
