At a distance of 60" that = 0.79578 arc minutes (pic related). That's not the only part you got wrong. Here's the key part you're missing:
VISUAL ACUITY TESTS USE CYCLES. WHETHER WE'RE TALKING ABOUT LINE PAIRS OR STROKES IN A LETTER, YOU NEED ***TWO*** PIXELS TO REPRESENT A CYCLE, A BLACK LINE ON A WHITE BACKGROUND. That means for a person with a visual acuity of 1 arc minute you need pixels that are 0.5 arc minutes or smaller in size to represent detail at the limit of said person's vision.
