There's several ways to convert pics to black and white, but I usually stick to one of these three methods: gradient maps, calculations, or channel mixer. The last two I learned here, on /p/. In the particular case of these images,

>>3501380 was made via channel mixer (with a bit of dodge and burn to fine tune the image). If needed, I use a curve adjustment layer to fine tune overall contrast, shadows and highlights (but I think I didn't need to in these pics). Pic related is the calculations tutorial. Almost all of these pics were shot with a Canon 5D3 + 24-70mm lens. Exceptions being
