If you must shoot it handheld do everything you can to ensure both focus and no camera shake. F11-f22, 1/125 - 1/500 shutter speed, wider angle lens like a 50mm-125mm. Get an anatomical grip if they have one.
If you do all that it becomes somewhat easy to get sharp images handheld. This horse pic was taken handheld using my linhof with a 127mm lens and a 6x7 back.
