Abstract patterns and images and whatnot can be interesting for the same reason “oddly satisfying” videos can be - the human brain likes seeing things in such an orderly manner, though it doesn’t have to be a primitive, visceral thing, but actually possibly very benevolent because observing such patterns implies a kind of programming, an intellectual quality which can only be observed and appreciated, which heightens the mind I guess.
