How do you think people take photos in winter? They go out and shoot.
If it stops working (usually the battery suddenly loses charge, or oil gets too thick and sticky), you bring it home, let it slowly (!) warm up and it's good as new.
Keep the batteries close to your body when not in use. Never let the camera or lenses rapidly warm up after bringing them in from the cold, best to leave them in the camera bag and, if possible, toss some packets of silica gel in.
They use the same Nikons in space, they're fairly robust.
