You can kinda do it in scanners that do 120 but you're usually still cropping.
The reason for it is that the Xpan negative is 65x24mm while 120 cameras are usually 56mm wide/tall. If you can get a dedicated scanner that does 6x7 then you're good to go, but you will have to cut every negative.
As for 135 dedicated scanners, you can do it by stitching and scanning two areas. Keep your settings consistent and buy a 2nd frame to cut the dividers on.
If you can DSLR scan, then this is by far the simplest/highest quality method. Either shoot in one frame or stitch across two.
Most people, even myself just use a shatbed for convenience.
