Usually conditions are not conducive so I shoot what is available. Macro work is similar, rarely can you get everything line up just perfect so it's series of compromises or happy surprises.
>>post processingI generally over expose the subject or the focus of the image and then bring the middle tones back down in LR and photoshop. This usually involves pushing the whites and pulling the blacks to true black and white and then pulling the exposure slider down 1/2 stop. Then mess with the color balance. If the image is still too bright I defer to photoshop for more control and push all the tones up or down towards the middle with luminosity masks and curves. This processing does silly things with saturation so if the base image is already saturated it wrecks everything.
