On weekends I do an off menu sirloin steak with smoked beef fat fries and no real garnishing, which is completely unlike anything on the menu. So I serve it on a metal tray I use in the kitchen instead of a plate, as a way of drawing attention to how it doesn't fit in. Plateware is important in that way, it can establish some tone in what you're doing and helps the dish speak for itself. So when you pick a plate, think about what it says about the dish.

Thanks! Yeah, grilled pineapple brushed with a rosemary syrup, wrapped in prosciutto and dressed with a vinaigrette using a watermelon vinegar we ferment from our scraps.

This was taken in the middle of busy service, so excuse the kinda fucked up focus. But it demonstrates why I like this camera so much. I can just pull it oot and do something like this without leaving the kitchen with results I enjoy. It's awesome.
