Still, it can be a bit of a mystery for some as far as where to even start. Since I get a lot of questions on 4x5 gear I did recently write a little article about it here:

You're right that you wouldn't notice the grain so much, just like you can't notice lens diffraction as much with larger formats. However, it would be somewhat counter-intuitive to use LF for stuff that you would push since you generally use really small apertures like f22 and f32 to get everything in focus. It would likely make more sense to use a smaller format with a larger aperture and not have to push so much.
