One stop is one stop on your aperture or shutter speed. Wider aperture means shallower DOF, but more light.
Slower shutter speeds means more prone to camera shake and moving objects blur, but more light.
Higher iso means larger grain, but more light.
You have to make the correct compromise if you are limited on light.
1/60s minimum if you're prone to camera shake, although 1/125s is better.
