the prime 35 should be nicely suited to grid and paddock shots, get up close around the drivers and crews if you can
for panning shots, with wider lenses I'd be starting off around 1/125s (use shutter priority mode unless you're dealing with changing conditions like panning through trees, or with big contrast in the scene, in those cases I'd shoot manual, or ae lock). have a play with shutter speed as you go on and see what seems to be working best, you can get some really nice shots at lower shutter speeds after a bit of practice to get the muscle memory going
