12MP is too low res and will be prone to aliasing. I dislike AA filters as much as anyone, and prefer they're not used, but they do serve a purpose and that purpose is valid at low resolutions. Bayer filters are problematic and you lose sharpness to them anyway so throwing out a little more to reduce aliasing is well worth it.
If these phones actually had 108MP sensors then they could do away with it. The truth is they've only got that resolution in the raw photosite count but the color filter is fixed at 12MP, so one "red" pixel is actually a 3x3 chunk of reds next to a 3x3 chunk of green. This effectively reduces resolution down to 12MP standard bayer which isn't even 1:1 true resolution because at 12MP it still needs demosaicing and that takes a toll on fine details.

Plenty of detail in the branches up close and the birds are in acceptable focus, the sun and highlights are blown but that's expected and the DSLR shot doesn't show much improvement there and that's something you'd see whether you missed focus or not.
As mentioned above the 108MP sensors are behind a 12MP filter so if you ever managed to find a way to actually get a 108MP RAWs the first thing you should be doing is resizing the output down to 12MP or using a demosaicing algorithm that recognizes the filter because they're never going to deliver a sharp 108MP image.
