In the 690 models, the whole presure plate comes out and flips over, and the grooves for the tangs that hold it in place are recessed to different depths.
The back has no mechanical connection to the body, it's purely a consideration for film thickness. Your winding anf film counter settings are done on a separate dial on the top plate. Pic related.
I believe the GS645 I used in Japan had a switch in the back that moved the plate with a cam operation. Not so sure on that one cos I don't have it anymore and didn't shot any 220 in it.
As far as the film thickness thing goes though, I think it's all over the place.
Some brands have backing paper that feels like cardboard (Rollei), some films are so thick and curly you need 12 hands to hold them flat fr scanning. The last roll of 120 TX400 I dev'd was so thin and flimsy I had trouble getting it on the spools, because it kept buckling (probs need to scrub out the ball bearing races too...)
But it's like anything in photography, there are always those that will take a non-issue to the n-th degree.
