Need less DOF? Longer focal length and take a step back. Position the subject so they’re further from the background. Need less noise at night? Drop the shutter speed and IBIS will take care of you. Need a higher res image? Computational high res modes will give you that.
Camera systems are way more than sensor size, and if you are an adaptable photographer you’d intuitively adjust your technique to get the results you want. There’s some inherent learning curve in any system you learn, even just based on which manufacturer of FF camera you use.
We are in an age of technology where sensor IQ on any modern ILC system far exceeds any 35mm film camera, and even MFT sensors have more dynamic range than FF cameras did 10 years ago. So for most situations we’re just splitting hairs.
