You definitely can get various kinds of legs. Of course, a hi-hat or mini tripod should be more versatile and stable than most other options, but if you wanted to you could probably shoot with something like depicted $2.5 plastic thing.
However, I suggest you yourself a favor and make everything use typical Arca Swiss (I like these better) or Manfrotto compatible QR plates for everything.
It's much easier if you can leave everything screwed on (heads/clamps below plates and equipment on top of lates) and just use QR mechanisms to swap gear.
