Your eyes have way more DR than the best sensor… so you’ll want to overexpose for the overall scene but by doing that the colors in the scene lose saturation due to too much luminance. You then boost saturation to compensate but then it just looks unnatural.
That other edit wasn’t really good either, as it just dropped saturation. To get this image to look more natural you need to drop exposure, drop saturation, then push hilights and vibrance to get a night + neon scene that looks natural.
