Generally, shooting in RAW with auto white balance is the best combo. RAW doesn't lock the WB in stone, auto will get it most of the way there though.
You could invest in a white or gray card too though. It depends what kind of shots you're doing though.
Flash can be great or it can make your photo suck monkey frenulum. I find omboard flash is best in fully lit conditions (to help fill and descern details) and also in fully black conditions (where you have no choice). Google some articles about flash though (in fact the user manual of your camera often has good advice as well) because lots of legit techniques and opinions exist.
Pic is an example: tree was heavily backlit and I used meager onboard flash, and it make the details of the trunk visible.
